  1. 1 cup pumpkin purée
  2. 1 cup buttermilk
  3. 2 eggs
  4. 2 teaspoon vanilla
  5. ½ cup sugar
  6. ½ cup dark brown sugar
  7. 2 cups flour
  8. ½ teaspoon baking powder
  9. ½ teaspoon baking soda
  10. ½ teaspoon salt
  11. 1 teaspoon cinnamon
  12. ½ teaspoon nutmeg
  13. ¼ teaspoon cloves
  14. ¼ teaspoon ginger

  1. Preheat the oven to 180°C.
  2. In a bowl, add all the dry ingredients (flour, baking soda, baking powder, salt and all the spices) except sugar and mix.
  3. In a separate bowl, add sugar, eggs, vanilla and buttermilk and mix well.
  4. Add the pumpkin and mix.
  5. And the flour mixture and mix well.
  6. Pour into a greased loaf pan and bake for 1 hour or when a toothpick inserted comes out clean.
  7. Remove from the oven and cool completely.
  8. Finish off with icing sugar glaze.
  9. Enjoy.

Dutch Oven Bread

  1. 1 cup digestive bran flour
  2. 1 ½ cup all purpose flour
  3. 2 teaspoons yeast
  4. 1 teaspoon salt
  5. ¼ cup sugar
  6. 2 tablespoons olive oil
  7. ¾ cup lukewarm water

  1. Mix the two flour and set aside.
  2. In a separate bowl, dissolve the yeast, sugar, salt in water.
  3. And to the flour mixture and mix well, use your hands if necessary.
  4. Add a dash of water if the dough is too thick to mix.
  5. Add the olive oil.
  6. Cover the bowl with plastic cling and let the dough rise for about 12 hours or overnight.
  7. Turn the oven to 220°C.
  8. Heat up the empty cast iron pot by placing it in the oven for about 5 minutes until it’s hot.
  9. Transfer the dough from the mixing bowl onto a floured surface and shape into a ball.
  10. Remove the cat iron pot from the oven and place the dough ball into the pot, cover with the lid and bake for 30 minutes.
  11. Remove the lid and bake for another 10-15 minutes or until golden brown and crusty.
  12. Remove from the oven and cool.
  13. Enjoy.

Festive Banana Bread

  1. 1 cup festive cake mix
  2. 1 cup mashed bananas
  3. ½ cup butter
  4. 1 egg
  5. 1/8 cup yoghurt
  6. ½ cup water
  7. ½ cup sugar
  8. 1 ½ cup self-raising flour
  9. ½ teaspoon cinnamon
  10. ½ teaspoon nutmeg
  11. ¼ teaspoon ginger
  12. ¼ teaspoon baking soda

Festive banana bread ingredients


  1. In a small bowl, add the festive cake mix and water and soak for at least 10 minutes, drain out and save the water for later.
  2. Mix all the dry ingredients together.
  3. In a mixing bowl, mix all the wet ingredients except the mashed bananas and festive cake mix.
  4. Add in the dry ingredients and mix well.
  5. Add in the mashed bananas and festive cake mix and mix well.
  6. Pour the batter into a greased or parchment paper lined loaf pan.
  7. Bake for 35-40 minutes.
  8. Remove from the oven and cool for a few minutes before removing from the pan and cooling completely on wire rack.
  9. Enjoy.

  1. 1 cup, cooked and mashed sweet potato
  2. 1 cup sugar
  3. 2 eggs, lightly beaten
  4.  ½ butter, melted
  5. ½ cup milk
  6. 2 ½ cups self-raising flour
  7. ½ teaspoon baking soda
  8. 1 teaspoon vanilla
  9. 1 teaspoon cinnamon
  10. 1 teaspoon nutmeg

  1. Pre-heat the oven at 175° Celsius.
  2. In a bowl, mix all the dry (flour, sugar, baking soda, spices) ingredients.
  3. In another bowl, mix the wet (egg, butter, milk, vanilla, mashed potato) ingredients, pour into the dry mixture and mix with spatula (no need to whisk).
  4. Pour into a greased loaf pan, brush with egg wash and bake for 35-40 minutes.
  5. Remove from oven and cool, then remove from the pan and cool on the wire rack.
  6. Serve warm or let cool completely.
  7. Enjoy.

Whole Wheat and Seed Bread

  1. 1 cup whole wheat flour
  2. 2 ½ cups white flour
  3. a handful of seeds(you can use any seeds, I used mixed seeds)
  4. 1 tablespoon of yeast
  5. a pinch of salt
  6. 1 cup, dark brown sugar
  7. 1 cup lukewarm water
  8. 1 cup lukewarm milk
  9. ½ cup melted butter
  10. 1 egg and 1 tablespoon of milk for egg wash

  1. In a mixing bowl, add all the dry ingredients (flour, yeast and salt).
  2. Add sugar and mix.
  3. Add butter and mix, using your hands if necessary.
  4. Add flour, water and milk in two increments and mix.
  5. Add in the seeds and mix.
  6. Cover with plastic wrap and the dough rise for about 1 hour in a warm place, do not refrigerate.
  7. Preheat the oven at 180°C.
  8. Grease a loaf pan and pour in the dough about halfway allowing room for it to rise.
  9. Brush with egg wash and sprinkle with seeds.
  10. Bake for 45 minutes – 1 hour until crisp and golden brown.
  11. Remove from the oven and let cool for a few minutes before removing from the pan.
  12. Remove from the pan and serve warm or let cool on a wire rack.
  13. Makes 2 small loaves or 1 large loaf.
  14. Enjoy.
