Festive banana bread

Ingredients

  1. 1 cup festive cake mix
  2. 1 cup mashed bananas
  3. ½ cup butter
  4. 1 egg
  5. 1/8 cup yoghurt
  6. ½ cup water
  7. ½ cup sugar
  8. 1 ½ cup self-raising flour
  9. ½ teaspoon cinnamon
  10. ½ teaspoon nutmeg
  11. ¼ teaspoon ginger
  12. ¼ teaspoon baking soda

Directions

  1. In a small bowl, add the festive cake mix and water and soak for at least 10 minutes, drain out and save the water for later.
  2. Mix all the dry ingredients together.
  3. In a mixing bowl, mix all the wet ingredients except the mashed bananas and festive cake mix.
  4. Add in the dry ingredients and mix well.
  5. Add in the mashed bananas and festive cake mix and mix well.
  6. Pour the batter into a greased or parchment paper lined loaf pan.
  7. Bake for 35-40 minutes.
  8. Remove from the oven and cool for a few minutes before removing from the pan and cooling completely on wire rack.
  9. Enjoy.

Festive Amarula and fruit cake

Ingredients

  1. 1/3 cup,  Amarula liqueur
  2. 2 cups, festive cake mix
  3. ½ cup, dark brown sugar
  4. ½ cup, butter
  5. 1 cup, water
  6. 1 cup flour
  7. 1 egg, lightly beaten
  8. ½ teaspoon, baking soda
  9. ½ teaspoon, cinnamon
  10. 1/3 teaspoon, ginger
  11. 1/3 teaspoon, nutmeg

Directions

  1. On medium heat, add water, sugar and butter into the pot and bring to a boil.
  2. Add the cake mix and cook for 15 minutes.
  3. Remove from the heat and cool completely.
  4. Preheat the oven at 160° Celsius.
  5. Pour the cooked mixture into a mixing bowl.
  6. Add in the spices and baking soda and mix.
  7. Add flour and mix.
  8. Add the liqueur and mix.
  9. Pour the batter into a greased cake pan and bake for 1 hour.
  10. Remove from the oven and cool for about 10 minutes.
  11. Remove from the pan and cool completely on a wire rack.
  12. Dust with icing sugar or decorate with dried fruits.
  13. I made two small cakes with this batter; it can also make one regular sized cake.
  14. Enjoy.
