
Ingredients
- 2 large ripe bananas
- 1 banana, extra for topping (optional)
- 2 eggs
- ⅓ cup of milk
- ⅓ cup of buttermilk
- ⅓ cup of butter, melted
- ⅓ cup of sugar
- 1 teaspoon vanilla essence
- 1 ¾ cups self-raising flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cinnamon, ¼ nutmeg, ¼ cloves (optional)
Directions
- Preheat the oven to 180℃.
- In a mixing bowl, mix flour, sugar, baking soda, salt and spices and set aside.
- Mash the bananas and set aside.
- In a separate bowl, whisk eggs.
- Add milk, buttermilk, butter, vanilla, mashed bananas and mix.
- Fold in the flour mixture. Do not over mix.
- Pour into a greased loaf pan.
- Top with a split banana and bake for 55-60 minutes
- Remove from the oven.
- Cover with a kitchen towel and cool in the pan for 20 minutes.
- Best served warm.
