Whole Wheat and Seed Bread

Ingredients

  1. 1 cup whole wheat flour
  2. 2 ½ cups white flour
  3. a handful of seeds(you can use any seeds, I used mixed seeds)
  4. 1 tablespoon of yeast
  5. a pinch of salt
  6. 1 cup, dark brown sugar
  7. 1 cup lukewarm water
  8. 1 cup lukewarm milk
  9. ½ cup melted butter
  10. 1 egg and 1 tablespoon of milk for egg wash

Directions

  1. In a mixing bowl, add all the dry ingredients (flour, yeast and salt).
  2. Add sugar and mix.
  3. Add butter and mix, using your hands if necessary.
  4. Add flour, water and milk in two increments and mix.
  5. Add in the seeds and mix.
  6. Cover with plastic wrap and the dough rise for about 1 hour in a warm place, do not refrigerate.
  7. Preheat the oven at 180°C.
  8. Grease a loaf pan and pour in the dough about halfway allowing room for it to rise.
  9. Brush with egg wash and sprinkle with seeds.
  10. Bake for 45 minutes – 1 hour until crisp and golden brown.
  11. Remove from the oven and let cool for a few minutes before removing from the pan.
  12. Remove from the pan and serve warm or let cool on a wire rack.
  13. Makes 2 small loaves or 1 large loaf.

Whole Wheat Banana Bread

Ingredients

  1. 1 cup self rising flour
  2. ½ cup whole wheat flour
  3. ½ cup brown sugar
  4. 1 teaspoon cinnamon
  5. ½ teaspoon baking powder
  6. ¼ teaspoon baking soda
  7. 2 large bananas, slightly mashed
  8. ½ melted butter
  9. 1/3 cup milk
  10. 2 large eggs, beaten
  11. 1 teaspoon vanilla extract/essence

Directions

  1. Preheat the oven at 180°C.
  2. In a mixing bowl, mix all the dry ingredients together(self rising flour, whole wheat flour, sugar, cinnamon, baking powder, baking soda).
  3. In a separate bowl, mix all the wet ingredients(bananas, butter, milk, eggs, vanilla extract).
  4. Add the wet ingredients to the dry ingredients and mix with a spatula until everything is incorporated, do not whisk and do not over mix.
  5. Spread the bather into a prepared bread loaf pan.
  6. Bake for 45 minutes or until a toothpick inserted comes out clean.
  7. Cool on a wire rack for a few minutes and remove from the pan.
  8. Slice a desired and serve warm or cool(I prefer it warm) with your choice of spread(sweet or savory).
