3 Ingredient Energy Balls

Ingredients

  1. 10 dates, pitted
  2. ⅓ cup peanut butter
  3. ⅓ cup quick cooking oats

Directions

  1. Add the dates into a food process and process for about 1 minute.
  2. Add peanut butter and oats and process until it roughly forms a dough.
  3. Roll the dough into balls of your preferred size.
  4. Place in the fridge to set for 30 minutes.
  5. Enjoy.

Hummus

Ingredients

  1. Chickpeas
  2. ¼ cup Sesame seeds
  3. 1 clove of Garlic
  4. ¼ cup olive oil
  5. 2 tablespoon lemon juice
  6. Salt and pepper to taste
  7. Water(Optional)

Directions

  1. Toast the sesame seeds in a pan for 10-15 minutes.
  2. Transfer to a food processor and blend until smooth.
  3. Add all the other ingredients and blend again until smooth.
  4. Add water, a little bit at a time if you need to thin it out.
  5. To serve, drizzle with olive oil.
  6. Enjoy.

Homemade Almond Butter

Ingredients

  1. 3 cups almonds (raw and unsalted)

Directions

  1. Preheat the oven to 180°C.
  2. Toast the almonds in the oven for 5 minutes.
  3. Let cool for a minute.
  4. Transfer into the food processor and process on high-speed until smooth.
  5. Scrape down the slides occasionally to ensure that all the nuts are well blended.
  6. Poor into a jar and keep refrigerated.
  7. Enjoy.

Butternut and Chickpea Curry

Ingredients

  1. 1 medium butternut, peeled and diced
  2. 1 can chickpea, drained and rinsed
  3. 1 can coconut milk
  4. ½ cup water
  5. 1 onion, finely chopped
  6. 3-4 cloves of garlic, finely chopped
  7. 1 green pepper, chopped
  8. 1 tomato, chopped
  9. 1 tablespoon coconut oil
  10. Salt and pepper to taste

Directions

  1. Sauté the onion and garlic in coconut oil until soft.
  2. Add butternut and water and bring to a boil, then simmer for 15-20 minutes.
  3. Add all the remaining ingredients and simmer for a further 10 minutes or until the sauce has reduced and thicken.
  4. Serve with rice.
  5. Enjoy.

Ingredients

  1. 6-7 small apples
  2. 1 cup festive cake mix
  3. ½ teaspoon cinnamon
  4. 1-2 tablespoon sugar

Crumble

  1. ¾ cup flour
  2. ½ cup oats
  3. ⅓ cup sugar
  4. ½ cup butter
  5. A couple of pecans

Directions

  1. Pre-heat the oven to 190°C.
  2. Soak the festive cake mix for about 10 minutes.
  3. Peel, core and cut the apples into large chunks.
  4. In a mixing bowl add the apple chunks, cinnamon, sugar and festive cake mix.
  5. In another mixing bowl, mix the flour, oats, and sugar then mix in the butter to form the crumble.
  6. Pour the apple mixture into a pie dish.
  7. Sprinkle the crumble over the top and press down slightly.
  8. Top with pecans and bake for 30 minutes or until golden brown.
  9. Remove from the oven and cool slightly.
  10. Serve with ice-cream, custard or whipped cream.
  11. Enjoy.
