Shortbread Cookies

Ingredients

  1. ½ cup butter, room temperature
  2. 1 cup icing sugar
  3. 1 ½ cup flour
  4. ½ teaspoon vanilla essence
  5. A Pinch of salt
  6. 1-2 teaspoons milk(optional)

Directions

  1. In a bowl of a stand mixer or a with a hand mixer, cream butter and icing sugar and vanilla.
  2. Add flour, salt and mix. Do not over mix.
  3. If your dough is dry, add 1-2 teaspoons of milk and mix.
  4. Place onto a work surface and bring the dough together by hand.
  5. Shape into a log and wrap in cling wrap.
  6. Chill in the fridge for 1 hour or overnight.
  7. Cut into slices and place onto a baking sheet lined with parchment paper.
  8. Bake for 15 -18 minutes in a 180℃ preheated oven.
  9. Remove from the oven and cool slightly in the baking sheet.
  10. Remove from the baking sheet and cool completely.
  11. Enjoy.

Oat and Raisin Cookies

Ingredients
1. 1 cup raisins
2. 2 cups oats
3. 1⅓ cup flour
4. ½ teaspoon baking soda
5. ½ cup dark brown sugar
6. ⅓ cup white sugar
7. 2 tablespoon molasses
8. ½ cup butter, room temperature
9. 1 large egg
10. 1 teaspoon vanilla
11. ½ teaspoon cinnamon
12. ¼ teaspoon nutmeg

Directions

  1. Soak the raisins in hot water for 30 minutes, drain and blot with kitchen towel to remove excess water.
  2. Mix all the dry ingredients (oats, flour, baking soda, cinnamon and nutmeg) and set aside.
  3. Mix butter, sugars, molasses, egg and vanilla.
  4. Add the dry ingredients and mix.
  5. Add the raisins and mix.
  6. Chill in the refrigerator for 1 hour.
  7. Scoop cookie dough balls onto a lined baking sheet and bake in a 175°C preheated oven for 14-16 minutes, then lightly press each cookie down to flatten and bake for further 3-5 minutes.
  8. Remove from the oven and cool a wire rack.
  9. Enjoy.

Ingredients

  1. 1 ¾ cup flour
  2. 1 teaspoon baking powder
  3. ½ teaspoon baking soda
  4. ½ cup dark brown sugar
  5. 2 teaspoon ginger
  6. 1 teaspoon allspice
  7. 1 teaspoon cinnamon
  8. 1 teaspoon cloves
  9. 1/3 cup butter, room temperature
  10. 1/3 cup syrup
  11. 1 egg
  12. ½ teaspoon vanilla

Directions

  1. Mix all the dry ingredients.
  2. In a separate bowl, mix all the wet ingredients and add in the dry ingredients and mix until well combined.
  3. Cover with plastic cling and refrigerate for an hour.
  4. Preheat the oven to 175°C.
  5. Roll out the dough to your preferred thickness.
  6. Cut out some shapes with cookie cutters and place on a parchment paper lined baking try.
  7. Bake for 10-12 minutes.
  8. Cool and decorate if desired.
  9. Enjoy.

  1. 2½ cup oats

  4. 1 cup butter, softened
  5. 1 cup raspberry preserves
  6. ¼ teaspoon baking soda

Directions

  1. Preheat the oven at 180°C.
  2. In a bowl, mix all the dry ingredients.
  3. Add butter and combine well with your hands.
  4. Add ¾ of the mixture into a baking dish covered with parchment paper and press it down with your hand to make sure it’s firm.
  5. Spread the raspberry preserves over the top.
  6. Sprinkle the remaining oats mixture and press it down a tittle bit.
  7. Bake for 25-30 minutes.
  8. Remove from the oven and cool for a while.
  9. Remove from the pan and remove the parchment paper and cool completely on a wire rack.
  10. Cut into squares.
  11. Enjoy.

Ingredients

  1. ½ cup chocolate chips
  2. ½ cup butter, room temperature
  3. 1 cup sugar
  4. 1 egg
  5. 1¾ cups flour
  6. ½ teaspoon vanilla
  7. ½ teaspoon baking soda
  8. ½ teaspoon nutmeg

Directions

  1. Preheat the oven at 180°C.
  2. In a mixing bowl, mix flour, baking soda and nutmeg.
  3. In a separate bowl, add butter and sugar and mix.
  4. Add egg and vanilla and mix.
  5. Pour the flour mixture and chocolate chips into the wet ingredients mixture in two increments.
  6. Dust a baking sheet or cover with parchment paper.
  7. With an ice-cream scoop or two spoons, scoop the dough and spread evenly onto the baking sheet.
  8. Bake for about 12-15 minutes.
  9. Remove from the oven and cool.
  10. Enjoy.
