Chocolate Cake

Chocolate cake

Ingredients

  1. 3 Large eggs
  2. 2 teaspoon vanilla
  3. 1 cup cooking oil
  4. ½ cup Buttermilk
  5. 1 cup milk
  6. ¼ cup hot water to dissolve the coffee
  7. 1 tablespoon instant coffee
  8. 3 cups flour
  9. ½ cup cocoa powder
  10. 2 teaspoon baking powder
  11. 1 teaspoon baking soda
  12. A pinch of salt

Butter cream frosting

  1. ¾ cup butter
  2. 4 cups icing sugar
  3. 1 cup cocoa
  4. 1/3 cup milk
  5. 1 teaspoon vanilla

Directions

  1. Dissolve the coffee in hot water and set aside.
  2. In a bowl, mix all the dry ingredients.
  3. In a separate bowl, mix all the wet ingredients.
  4. Add the dry ingredients and mix well.
  5. Pour into two greased medium pans and bake in a 180°C preheated oven for 35-40 minutes.
  6. Remove from the oven and cool for a few minutes before removing from removing from the pans and cool completely on a wire rack.
  7. To make the frosting, cream the butter in the mixer and add icing sugar, cocoa and gradually add milk until you’re happy with the consistency, and finally add vanilla and mix well.
  8. Frost the cake.
  9. Enjoy.

Chocolate Brownies

Ingredients

  1. 100g semi-sweet chocolate
  2. Chocolate bar with nuts
  3. 2 tablespoons cocoa powder
  4. ½ cup butter
  5. 1 cup sugar
  6. 3 large eggs
  7. 1 teaspoon vanilla
  8. 1 cup flour
  9. ⅓cup peanuts/any nuts (optional)

Directions

  1. Preheat the oven to 180°C.
  2. Melt the semi-sweet chocolate and butter and let cool.
  3. Roughly chop up the chocolate bar into large chunks, also chop up the nuts and set aside.
  4. Add the sugar to the melted chocolate and whisk.
  5. Whisk in the eggs one at a time and vanilla.
  6. Sift in the flour and cocoa powder and mix.
  7. Add the chopped chocolate and nuts and mix.
  8. Pour into a parchment paper lined pan and bake for 30 minutes.
  9. Remove from the oven and cool slightly in the pan.
  10. Remove from the pan and cut into squares.
  11. Enjoy.

Chocolate Blue Cheese Cupcakes

Ingredients

  1. Dark chocolate 125 grams
  2. Blue cheese 100g(save some for the frosting)
  3. ½ cup butter
  4. 2 whole eggs
  5. 2 egg yolks
  6. 2 cups self-raising flour
  7. 1 cup sugar
  8. 1/3 cup milk
  9. ½ teaspoon vanilla
  10. ½ teaspoon baking soda

Frosting

  1. Icing sugar
  2. Fresh cream
  3. Blue cheese
  4. Cocoa powder

Directions

  1. Preheat the oven and 180°C.
  2. Melt the chocolate and butter over a double boiler and set aside to cool.
  3. In a bowl, mix flour and baking soda.
  4. In a separate mixing bowl, add the whole eggs, egg yolks and vanilla and whisk.
  5. Add in the sugar and whisk until smooth and fluffy.
  6. Add in the melted chocolate and mix.
  7. Add in the flour mixture and milk in two increments and mix.
  8. Scoop the batter halfway into a muffin tin and place a blue cheese chunk in the middle of each cupcake, press it down and cover with some batter. Make the blue cheese pieces as large or as small as you like depending on how much you like blue cheese (I made these for my best friend’s birthday and she really love blue cheese so the bigger the better for her).
  9. Bake in the oven for 15-20 minutes and let cool for a while, and then remove from the pan and let cool completely on a wire rack.
  10. While the cupcakes cool, prepare the frosting.
  11. Mix the cocoa powder with 1-2 tablespoon of fresh cream to form a paste.
  12. Whip the cream; add in the icing sugar and cocoa paste and whisk.
  13. Smooth the blue whisk into the frosting mixture.
  14. Frost the cupcakes as desired.
  15. Enjoy.

Ingredients

  1. ½ cup chocolate chips
  2. ½ cup butter, room temperature
  3. 1 cup sugar
  4. 1 egg
  5. 1¾ cups flour
  6. ½ teaspoon vanilla
  7. ½ teaspoon baking soda
  8. ½ teaspoon nutmeg

Directions

  1. Preheat the oven at 180°C.
  2. In a mixing bowl, mix flour, baking soda and nutmeg.
  3. In a separate bowl, add butter and sugar and mix.
  4. Add egg and vanilla and mix.
  5. Pour the flour mixture and chocolate chips into the wet ingredients mixture in two increments.
  6. Dust a baking sheet or cover with parchment paper.
  7. With an ice-cream scoop or two spoons, scoop the dough and spread evenly onto the baking sheet.
  8. Bake for about 12-15 minutes.
  9. Remove from the oven and cool.
  10. Enjoy.

Ingredients

  1. 1 Cup sugar
  2. 2 cups self-raising flour
  3. ½ butter, room temperature
  4. 2 eggs, lightly beaten
  5. ½ cup milk
  6. ¼ cup cocoa powder
  7. ¼ cup warm water
  8. 1 teaspoon vanilla

Frosting

  1. Chocolate
  2. ⅓ cup butter
  3. icing sugar
  4. berries

Directions

  1. Pre-heat the oven at 175°C.
  2. In a mixing bowl, add cocoa powder and warm water, mix and set aside to cool.
  3. In a separate bowl, add butter and sugar and mix.
  4. Add eggs and vanilla and whisk.
  5. Pour in the cocoa mixture and mix.
  6. Add flour and milk in two increments and mix.
  7. Divide the batter into two equal parts and pour into a heart shaped greased pan and bake for 30-35 minutes.
  8. Remove from the oven and cool for about 10 minutes.
  9. Remove from the oven and cool completely on wire rack.
  10. Melt the chocolate and butter and mix well, add in the icing sugar, mix and frost the cake.
  11. Garnish with berries.
  12. Enjoy.
