Ingredients

  1. 1 cup self-raising flour
  2.  ½ cup sugar (I used dark brown)
  3. 1 egg, lightly beaten
  4. ½ teaspoon vanilla
  5. ¼ cup butter, melted
  6. ½ cup milk
  7. ¼ teaspoon baking soda

Honey glaze

  1. ⅛ cup honey
  2. 2 tablespoon butter

Directions

  1. Preheat the oven at 180°C.
  2. In a pan, warm up the milk and butter over medium to low heat, do not boil and set aside to cool.
  3. In a bowl, mix flour, sugar and baking soda.
  4. In a separate bowl, mix the egg and vanilla and add in the milk and butter mixture.
  5. Pour into the flour mixture and mix well.
  6. Pour into a greased loaf pan and bake for 30-35 minutes.
  7. Remove from the oven and let cool for a while before removing from the pan and cool on a wire rack.
  8. For the glaze: Melt the butter and honey in a pan and pour over the loaf.
  9. Best served warm.
  10. Enjoy.

Sweet Potato Bread

Ingredients

  1. 1 cup, cooked and mashed sweet potato
  2. 1 cup sugar
  3. 2 eggs, lightly beaten
  4.  ½ butter, melted
  5. ½ cup milk
  6. 2 ½ cups self-raising flour
  7. ½ teaspoon baking soda
  8. 1 teaspoon vanilla
  9. 1 teaspoon cinnamon
  10. 1 teaspoon nutmeg
  11. Extra egg and milk for egg wash

Directions

  1. Pre-heat the oven at 175° Celsius.
  2. In a bowl, mix all the dry (flour, sugar, baking soda, spices) ingredients.
  3. In another bowl, mix the wet (egg, butter, milk, vanilla, mashed potato) ingredients, pour into the dry mixture and mix with spatula (no need to whisk).
  4. Pour into a greased loaf pan, brush with egg wash and bake for 35-40 minutes.
  5. Remove from oven and cool, then remove from the pan and cool on the wire rack.
  6. Serve warm or let cool completely.
  7. Enjoy.

Whole Wheat and Seed Bread

Ingredients

  1. 1 cup whole wheat flour
  2. 2 ½ cups white flour
  3. a handful of seeds(you can use any seeds, I used mixed seeds)
  4. 1 tablespoon of yeast
  5. a pinch of salt
  6. 1 cup, dark brown sugar
  7. 1 cup lukewarm water
  8. 1 cup lukewarm milk
  9. ½ cup melted butter
  10. 1 egg and 1 tablespoon of milk for egg wash

Directions

  1. In a mixing bowl, add all the dry ingredients (flour, yeast and salt).
  2. Add sugar and mix.
  3. Add butter and mix, using your hands if necessary.
  4. Add flour, water and milk in two increments and mix.
  5. Add in the seeds and mix.
  6. Cover with plastic wrap and the dough rise for about 1 hour in a warm place, do not refrigerate.
  7. Preheat the oven at 180°C.
  8. Grease a loaf pan and pour in the dough about halfway allowing room for it to rise.
  9. Brush with egg wash and sprinkle with seeds.
  10. Bake for 45 minutes – 1 hour until crisp and golden brown.
  11. Remove from the oven and let cool for a few minutes before removing from the pan.
  12. Remove from the pan and serve warm or let cool on a wire rack.
  13. Makes 2 small loaves or 1 large loaf.
  14. Enjoy.

Beer Bread

  1. Beer bread mix
  2. Beer 330ml  at room temperature

Directions

Although it’s pretty simple and straight forward, your beer bread mix should come with instructions, below are the instructions from my beer bread mix container:

  1. Pre heat the oven at 180°C.
  2. Grease and dust your loaf pan.
  3. Empty the beer bread mix (450g) into a mixing bowl and add the beer.
  4. Mix until all the ingredient are well combined and the dough is smooth.
  5. Pour the dough into the loaf pan.
  6. Brush the top generously with melted butter, this will make sure you have a crispy crust.
  7. Bake between 45 minutes and 1 hour until golden brown and when a toothpick inserted come out clean.
  8. Remove from the oven and cool for 15 minutes and remove from the pan.
  9. Best served warm with butter or cheese.

Almond Flake Loaf

Ingredients

  1.  1 cup Self-raising flour
  2. ⅓ cup butter, softened
  3. ½ cup sugar
  4. 2 eggs, beaten
  5.  ¼ cup of milk
  6. teaspoon almond flavor
  7. a handful of almond flakes

Directions

  1. Preheat the oven at 180°C.
  2. In a bowl, add butter and sugar and mix.
  3. Add in the eggs and almond flour and whisk well.
  4. Add half the flour and mix well.
  5. Add milk and mix, then add the remaining flour.
  6. Pour the batter into a greased and dusted loaf pan.
  7. Sprinkle with almond flakes.
  8. Bake for 45 minutes  or when a toothpick inserted comes out clean.
  9. Cool for 10 min and remove from the pan.

I didn’t wait long enough for it cool and I removed it from the pan too soon and yes it broke, so I had to slice it in the pan.

If you make a little bit more than enough batter for your pan, just make some muffins with the excess batter 🙂
