Cinnamon Rolls

Ingredients

Rolls

  1. 2 ¼ cups flour
  2. ½ packet of instant yeast
  3. ½ teaspoon salt
  4. ¾ cup warm milk
  5. 2-3 tablespoons sugar
  6. 1 egg
  7. ¼ cup butter, melted

Filling

  1. ⅓ cup softened butter
  2. ¼  cup of sugar
  3. 1 tablespoon ground cinnamon
  4. ¼ teaspoon salt

Cream cheese glaze

  1. 2 tablespoon cream cheese
  2. 2 tablespoon butter
  3. ½ cup icing sugar
  4. ¼ teaspoon vanilla
  5. 1 tablespoon warm milk

Directions

  1. Combine flour and salt.
  2. Mix milk, butter, eggs, sugar and yeast.
  3. Add 2 cups of flour to the wet ingredients a little at a time and mix until well combined.
  4. Add the remaining flour a tablespoon at a time until you form a soft dough. You might not need all the flour.
  5. Place into an oiled bowl, cover with cling wrap and a kitchen towel and let it rise for 1 hour or until doubled in size.
  6. Mix sugar, cinnamon, salt and set aside.
  7. Roll the dough into a rectangle with a rolling pin.
  8. Brush with butter and sprinkle with cinnamon sugar.
  9. Roll into a log.
  10. Cut into 9-12 equal pieces.
  11. Place onto a greased baking dish.
  12. Cover with cling wrap and a kitchen towel and proof again for 30-40 minutes.
  13. Brush the top with butter.
  14. Bake for 20-25 minutes until golden brown.
  15. Remove from the oven and cool slightly.
  16. Prepare the glaze and drizzle on top while still warm.
  17. Enjoy.

Shortbread Cookies

Ingredients

  1. ½ cup butter, room temperature
  2. 1 cup icing sugar
  3. 1 ½ cup flour
  4. ½ teaspoon vanilla essence
  5. A Pinch of salt
  6. 1-2 teaspoons milk(optional)

Directions

  1. In a bowl of a stand mixer or a with a hand mixer, cream butter and icing sugar and vanilla.
  2. Add flour, salt and mix. Do not over mix.
  3. If your dough is dry, add 1-2 teaspoons of milk and mix.
  4. Place onto a work surface and bring the dough together by hand.
  5. Shape into a log and wrap in cling wrap.
  6. Chill in the fridge for 1 hour or overnight.
  7. Cut into slices and place onto a baking sheet lined with parchment paper.
  8. Bake for 15 -18 minutes in a 180℃ preheated oven.
  9. Remove from the oven and cool slightly in the baking sheet.
  10. Remove from the baking sheet and cool completely.
  11. Enjoy.

Apple Raisin Muffins

Ingredients

  1. 1 Large apple
  2. 1 cup raisins
  3. ½ cup Buttermilk
  4. ⅓ cup raisin water
  5. ¼ cup sunflower oil
  6. 2 eggs
  7. ¼ cup sugar
  8. 1 cup oats
  9. ⅔ cup self-raising flour
  10. ½ teaspoon baking soda
  11. 1 teaspoon cinnamon
  12. ¼ teaspoon salt

Directions

  1. Soak the raisins for 30-60 minutes.
  2. Strain the water from the raisins and reserve ⅓ cup.
  3. Mix oats, buttermilk, raisin water and set aside and let it soak for a few minutes.
  4. Mix flour, sugar, salt, baking soda, cinnamon and set aside.
  5. Cut the apple into chunks.
  6. Add all the wet ingredients into the oats mixture and mix well.
  7. Add raisins, apple chunks and mix.
  8. Fold in the flour mixture.
  9. Divide equally into a lined muffin tin.
  10. Bake for 35 minutes in 180℃ degree preheated oven.
  11. Remove from the oven and Cool.
  12. Enjoy.

Banana Bread

Ingredients

  1. 2 large ripe bananas
  2. 1 banana, extra for topping (optional)
  3. 2 eggs
  4. ⅓ cup of milk
  5. ⅓ cup of buttermilk
  6. ⅓ cup of butter, melted
  7. ⅓ cup of sugar
  8. 1 teaspoon vanilla essence
  9. 1 ¾ cups self-raising flour
  10. ½ teaspoon baking soda
  11. ¼ teaspoon salt
  12.  ½ cinnamon, ¼ nutmeg, ¼ cloves (optional)

Directions

  1. Preheat the oven to 180℃.
  2. In a mixing bowl, mix flour, sugar, baking soda, salt and spices and set aside.
  3. Mash the bananas and set aside.
  4. In a separate bowl, whisk eggs.
  5. Add milk, buttermilk, butter, vanilla, mashed bananas and mix.
  6. Fold in the flour mixture. Do not over mix.
  7. Pour into a greased loaf pan.
  8. Top with a split banana and bake for 55-60 minutes
  9. Remove from the oven.
  10. Cover with a kitchen towel and cool in the pan for 20 minutes.
  11. Best served warm.

White Bread Loaf

Ingredients

  1. 3 cups of bread flour
  2. ½ packet of yeast
  3. 1 cup lukewarm water
  4. ⅔ cup lukewarm milk
  5. 2 eggs
  6. 3 tablespoons of butter, melted
  7. 3 tablespoons of sugar
  8. 1 teaspoon of salt

Directions

  1. In a bowl of a stand mixer or by hand, add flour and mix in the yeast and salt on the opposite sides of the bowl.
  2. In a jug, add water, milk and sugar and mix until the sugar has dissolved.
  3. Pour the liquid into the four mixture, add eggs and butter and mix until incorporated.
  4. Knead for 5-10 minutes until it forms a ball of dough and the bowl is clean.
  5. Coat the bowl and dough with oil, cover with cling wrap and a kitchen towel, place in a warm place and it rise for 1 hour or until doubled in size.
  6. Knock out the air, place and spread out onto a work surface and with a rolling pin roll into a rectangle.
  7. Roll into a log to form the loaf.
  8. Place into a greased pan, cover with cling wrap and a kitchen towel and let it rise for another hour.
  9. Bake in a 180°C preheated oven for 30-35 minutes.
  10. Remove from the oven and cool slightly in the pan.
  11. Brush the top with melted butter.(optional)
  12.  Remove from the pan and cool completely on a wire rack.
  13. Enjoy.
