Ingredients
- 1 cup, grated carrots
- 1 cup, grated apples
- ½ cup cooking oil
- ¾ cup buttermilk
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- ½ cup dark brown sugar
- ½ cup white sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
Directions
- In a mixing bowl, mix all the dry ingredients.
- In a separate bowl, mix all the wet ingredients.
- Add the dry ingredients and mix well.
- Pour the batter into a greased or lined loaf pan and bake for 45-48 minutes or when a toothpick inserted comes out clean.
- Remove from the oven and cool for a few minutes before removing from the pan and cool completely on a wire rack.
