Valentine’s Chocolate Strawberries

Ingredients

  1. Fresh strawberries
  2. Chocolate of your choice
  3. 2 teaspoons butter

Directions

  1. Wash the strawberries and set aside to dry. Do not remove the stems.
  2. Melt the chocolate.
  3. Dip the strawberries in the chocolate and place on flat surface or in my case on a wire rack.
  4. If you want a thicker coat, dip the strawberries in the chocolate a couple of times.
  5. Refrigerate for about two hours to set and chill.
  6. Enjoy.

Spinach and Feta Quiche

Ingredients

  1. 1½ cup, crushed digestive biscuits
  2. ¼ cup, melted butter
  3. Undercooked spinach, cooled
  4. 3 eggs
  5. 3 tablespoon milk
  6. ⅓ cup feta cheese
  7. 1 cup grated mozzarella cheese
  8. Salt and pepper to taste

Directions

  1. Preheat the oven at 175°C.
  2. In a mixing bowl, add crushed digestive biscuits and butter and combine with your hands.
  3. Add the mixture into a pie dish and press down and on sides firmly and evenly to form a crust.
  4. Bake for 10 minutes and remove from oven.
  5. Whisk the eggs and milk and add salt and pepper.
  6. Add in the spinach, half the mozzarella cheese, feta and mix.
  7. Pour on top of the crust and sprinkle with the remaining mozzarella cheese.
  8. Bake for 30-35 minutes; remove from the oven and let cool for 10 minutes.
  9. Enjoy.

Sweet Potato Bread

  1. 1 cup, cooked and mashed sweet potato
  2. 1 cup sugar
  3. 2 eggs, lightly beaten
  4.  ½ butter, melted
  5. ½ cup milk
  6. 2 ½ cups self-raising flour
  7. ½ teaspoon baking soda
  8. 1 teaspoon vanilla
  9. 1 teaspoon cinnamon
  10. 1 teaspoon nutmeg
  11. Extra egg and milk for egg wash

Directions

  1. Pre-heat the oven at 175° Celsius.
  2. In a bowl, mix all the dry (flour, sugar, baking soda, spices) ingredients.
  3. In another bowl, mix the wet (egg, butter, milk, vanilla, mashed potato) ingredients, pour into the dry mixture and mix with spatula (no need to whisk).
  4. Pour into a greased loaf pan, brush with egg wash and bake for 35-40 minutes.
  5. Remove from oven and cool, then remove from the pan and cool on the wire rack.
  6. Serve warm or let cool completely.
  7. Enjoy.

Whole Wheat and Seed Bread

Ingredients

  1. 1 cup whole wheat flour
  2. 2 ½ cups white flour
  3. a handful of seeds(you can use any seeds, I used mixed seeds)
  4. 1 tablespoon of yeast
  5. a pinch of salt
  6. 1 cup, dark brown sugar
  7. 1 cup lukewarm water
  8. 1 cup lukewarm milk
  9. ½ cup melted butter
  10. 1 egg and 1 tablespoon of milk for egg wash

Directions

  1. In a mixing bowl, add all the dry ingredients (flour, yeast and salt).
  2. Add sugar and mix.
  3. Add butter and mix, using your hands if necessary.
  4. Add flour, water and milk in two increments and mix.
  5. Add in the seeds and mix.
  6. Cover with plastic wrap and the dough rise for about 1 hour in a warm place, do not refrigerate.
  7. Preheat the oven at 180°C.
  8. Grease a loaf pan and pour in the dough about halfway allowing room for it to rise.
  9. Brush with egg wash and sprinkle with seeds.
  10. Bake for 45 minutes – 1 hour until crisp and golden brown.
  11. Remove from the oven and let cool for a few minutes before removing from the pan.
  12. Remove from the pan and serve warm or let cool on a wire rack.
  13. Makes 2 small loaves or 1 large loaf.
  14. Enjoy.

Perfect oats

Its official, I’m obsessed with oats. Not only yummy but it’s nutritious and quick to make as well.  I almost always have oats for breakfast; unfortunately not everyone else around me is thrilled to have it every single day and it can become boring to always eat the same thing. So, I try out different ways to make sure everyone enjoy this healthy breakfast dish as much as I do.

Ingredients

  1. ½ cup, oats
  2. ½ cup, water
  3. ½ cup, milk
  4. 2 tablespoon, sugar
  5. A pinch of salt

Directions

  1. On medium heat, pour milk and water into the pot.
  2. Add oats and stir gently, do not over whisk, you want the porridge to be creamy but textured.
  3. Add butter, sugar and salt and bring to a boil.
  4. Lower the heat and cook for 3 minutes and stir once in a while.
  5. Close with the lid and turn off the heat and simmer for two minutes.
  6. Serve with your favourite fruit, nuts or seeds.
  7. Enjoy.
