3 Ingredient Energy Balls

Ingredients

  1. 10 dates, pitted
  2. ⅓ cup peanut butter
  3. ⅓ cup quick cooking oats

Directions

  1. Add the dates into a food process and process for about 1 minute.
  2. Add peanut butter and oats and process until it roughly forms a dough.
  3. Roll the dough into balls of your preferred size.
  4. Place in the fridge to set for 30 minutes.
  5. Enjoy.

Oat and Raisin Cookies

Ingredients
1. 1 cup raisins
2. 2 cups oats
3. 1⅓ cup flour
4. ½ teaspoon baking soda
5. ½ cup dark brown sugar
6. ⅓ cup white sugar
7. 2 tablespoon molasses
8. ½ cup butter, room temperature
9. 1 large egg
10. 1 teaspoon vanilla
11. ½ teaspoon cinnamon
12. ¼ teaspoon nutmeg

Directions

  1. Soak the raisins in hot water for 30 minutes, drain and blot with kitchen towel to remove excess water.
  2. Mix all the dry ingredients (oats, flour, baking soda, cinnamon and nutmeg) and set aside.
  3. Mix butter, sugars, molasses, egg and vanilla.
  4. Add the dry ingredients and mix.
  5. Add the raisins and mix.
  6. Chill in the refrigerator for 1 hour.
  7. Scoop cookie dough balls onto a lined baking sheet and bake in a 175°C preheated oven for 14-16 minutes, then lightly press each cookie down to flatten and bake for further 3-5 minutes.
  8. Remove from the oven and cool a wire rack.
  9. Enjoy.

Honey Oat Bread

Honey oat bread

Ingredients

  1. 1 cup oats plus extra for topping
  2. ½ cup whole wheat flour
  3. 4½ cups white bread flour
  4. 1 packet instant yeast
  5. ½ teaspoon of salt
  6. 1/3 cup honey plus extra for brushing
  7. 1 cup warm water
  8. ½ cup warm milk
  9. 3 tablespoons melted butter

Directions

  1. Into a bowl of a stand mixture, add all the dry ingredients and mix.
  2. Add all the wet ingredients and mix.
  3. Use the hook attachment to form the dough for a few minutes or knead with your hands.
  4. Add the dough into an oil coated bowl and roll the dough in the bowl to make sure all side are covered with oil.
  5. Cover with cling wrap and set aside to rise for an hour or until the dough it doubled in size.
  6. Punch the dough down and divide into two parts.
  7. For each half, place the dough onto a floured surface and flatten with your hands. Fold in half and fold again and pinch the edges together and form into an oval/rounded shape.
  8. For each half, place into a parchment covered loaf pan and over in plastic cling and let rise for another 30-45 minutes but not double in size.
  9. Brush with melted honey and sprinkle the top with oats.
  10. Bake for 45-60 minutes a 180°C preheated oven.
  11. Remove from the oven and cool for about 10 minutes before removing from the pan and cool on a wire rack.
  12. Enjoy warm with a honey or any spread of your choice.

Ingredients

  1. 1 cup oats plus more for topping
  2. 2 cups flour
  3. 1 teaspoon baking powder
  4. ½ teaspoon baking soda
  5. ½ teaspoon cinnamon
  6. ¼ teaspoon nutmeg
  7. 1 cup sugar
  8. 1 cup buttermilk
  9. ½ cup butter, melted
  10. 1 banana
  11. ½ milk
  12. 1 egg
  13. 1 teaspoon vanilla

Directions

  1. In a mixing bowl, mix all the dry ingredients.
  2. In a separate bowl, mix all the wet ingredients.
  3. Add the dry ingredients mixture and combine.
  4. Fill up a lined muffin pan and sprinkle the top with some oats.
  5. Bake for 20-25 minutes.
  6. Remove from the oven and cool on a wire rack.
  7. Enjoy.

  1. 2 cup traditional oats
  2. 1 cup mixed raw nuts
  3. ⅓ cup mixed seeds
  4. ⅓ cup pumpkin seeds
  5. 1 teaspoon cinnamon
  6. ½ teaspoon nutmeg (optional)
  7. ¼ teaspoon cloves (optional)
  8. ½ cup cranberries
  9. ½ cup banana chips
  10. ¼ coconut flakes (optional)

Syrup

  1. 1 cup brown sugar
  2. ½ cup butter
  3. 2 teaspoon caramel flavour
  4. ½ teaspoon vanilla

Directions

  1. Preheat the oven at 180°C.
  2. In a bowl, add oats, nuts, seeds, spices and mix.
  3. Pour into a greased baking tray and bake for 10-12 minutes while stirring occasionally.
  4. Meanwhile, make the Syrup. Recipe here.
  5. Remove from the oven and pour the syrup over, making sure everything is coated well with the syrup.
  6. Return into the oven and bake 8-10 minutes and stir occasionally.
  7. Remove from the oven and let cool.
  8. Add the dried fruit and mix.
  9. Cool completely and store in a airtight container.
  10. Enjoy.
