Ingredients

  1. 1 large Sweet potato
  2. 1 large Butternut
  3.  5 large carrots
  4. Olive oil
  5. Salt
  6. Pepper

Directions

  1. Preheat the oven at 200°C.
  2. Peel the vegetables and slice into medium to thin slices.
  3. Brush the baking tray with olive oil.
  4. Layer the vegetables in the baking tray and brush each layer with olive oil.
  5. Sprinkle each layer with salt and pepper.
  6. Cover with foil and roast in the oven for 45 min. **The foil will make sure that your veggies will be soft and moist.
  7. This dish is great and filling on its own, but also great with some meat or chicken.

Whole Wheat Banana Bread

Ingredients

  1. 1 cup self rising flour
  2. ½ cup whole wheat flour
  3. ½ cup brown sugar
  4. 1 teaspoon cinnamon
  5. ½ teaspoon baking powder
  6. ¼ teaspoon baking soda
  7. 2 large bananas, slightly mashed
  8. ½ melted butter
  9. 1/3 cup milk
  10. 2 large eggs, beaten
  11. 1 teaspoon vanilla extract/essence

Directions

  1. Preheat the oven at 180°C.
  2. In a mixing bowl, mix all the dry ingredients together(self rising flour, whole wheat flour, sugar, cinnamon, baking powder, baking soda).
  3. In a separate bowl, mix all the wet ingredients(bananas, butter, milk, eggs, vanilla extract).
  4. Add the wet ingredients to the dry ingredients and mix with a spatula until everything is incorporated, do not whisk and do not over mix.
  5. Spread the bather into a prepared bread loaf pan.
  6. Bake for 45 minutes or until a toothpick inserted comes out clean.
  7. Cool on a wire rack for a few minutes and remove from the pan.
  8. Slice a desired and serve warm or cool(I prefer it warm) with your choice of spread(sweet or savory).

Easy Creamy Potato Bake

Ingredients

  1. 4 large Potatoes
  2. ½ cup Cream cheese or sour cream
  3. 2 tablespoons extra virgin olive oil
  4. 1 teaspoon of your choice of dried herbs
  5. Black pepper to taste
  6. Salt to taste

Directions

  1. Preheat the oven at 200° Celsius.
  2. Peel the potatoes.
  3. Cut the potatoes into thin slices.
  4. Season the potatoes with salt.
  5. Grease your oven dish with 1 tablespoon of extra virgin olive oil.
  6. Place one layer of the potatoes in the dish.
  7. Add a layer of cream cheese or sour cream.
  8. Sprinkle with black pepper.
  9. Repeat 4-6 until you’ve used up all the potatoes.
  10. Drizzle with 1 tablespoon of extra virgin olive oil.
  11. Sprinkle with herbs.
  12. Cover with aluminium foil and bake at 200° Celsius for one hour or until the potato is soft and tender.
  13. Serve green salad.
