Apple Raisin Muffins

Ingredients

  1. 1 Large apple
  2. 1 cup raisins
  3. ½ cup Buttermilk
  4. ⅓ cup raisin water
  5. ¼ cup sunflower oil
  6. 2 eggs
  7. ¼ cup sugar
  8. 1 cup oats
  9. ⅔ cup self-raising flour
  10. ½ teaspoon baking soda
  11. 1 teaspoon cinnamon
  12. ¼ teaspoon salt

Directions

  1. Soak the raisins for 30-60 minutes.
  2. Strain the water from the raisins and reserve ⅓ cup.
  3. Mix oats, buttermilk, raisin water and set aside and let it soak for a few minutes.
  4. Mix flour, sugar, salt, baking soda, cinnamon and set aside.
  5. Cut the apple into chunks.
  6. Add all the wet ingredients into the oats mixture and mix well.
  7. Add raisins, apple chunks and mix.
  8. Fold in the flour mixture.
  9. Divide equally into a lined muffin tin.
  10. Bake for 35 minutes in 180℃ degree preheated oven.
  11. Remove from the oven and Cool.
  12. Enjoy.

Oat and Raisin Cookies

Ingredients
1. 1 cup raisins
2. 2 cups oats
3. 1⅓ cup flour
4. ½ teaspoon baking soda
5. ½ cup dark brown sugar
6. ⅓ cup white sugar
7. 2 tablespoon molasses
8. ½ cup butter, room temperature
9. 1 large egg
10. 1 teaspoon vanilla
11. ½ teaspoon cinnamon
12. ¼ teaspoon nutmeg

Directions

  1. Soak the raisins in hot water for 30 minutes, drain and blot with kitchen towel to remove excess water.
  2. Mix all the dry ingredients (oats, flour, baking soda, cinnamon and nutmeg) and set aside.
  3. Mix butter, sugars, molasses, egg and vanilla.
  4. Add the dry ingredients and mix.
  5. Add the raisins and mix.
  6. Chill in the refrigerator for 1 hour.
  7. Scoop cookie dough balls onto a lined baking sheet and bake in a 175°C preheated oven for 14-16 minutes, then lightly press each cookie down to flatten and bake for further 3-5 minutes.
  8. Remove from the oven and cool a wire rack.
  9. Enjoy.
