Christmas Fruit Cake

Ingredients

  1. 2 cups festive cake mix
  2. Chopped glacé cherries
  3. ½ cup crushed pineapple
  4. ¾ cup butter
  5. ¾ cup dark brown sugar
  6. 2 eggs
  7. 1/3 cup festive cake mix soaking water
  8. ¼ pineapple syrup
  9. 1 teaspoon vanilla
  10. 2 ⅓ cup self-raising flour
  11. 1 teaspoon cinnamon
  12. ½ teaspoon nutmeg
  13. ½ teaspoon clove
  14. ½ teaspoon ginger
  15. ½ teaspoon baking soda

Syrup

  1. 1 cup brown sugar
  2. ½ cup butter
  3. ½ teaspoon vanilla

Directions

  1. Preheat the oven to 175°C.
  2. Soak the festive cake mix for about an hour.
  3. Mix all the dry ingredients (flour, spices and baking soda) and set aside.
  4. In a mixing bowl, add butter, sugar, eggs vanilla and mix.
  5. Add in the flour mixture alternating with soaking water and pineapple syrup and mix well.
  6. Add in the festive cake mix, glacé cherries and pineapple and mix well but do not over mix.
  7. Pour into greased or parchment paper lined pans and bake for 40-45 minutes for medium pans and 35-40 minutes for small pans. Makes 2 medium or 4 small cakes.
  8. In the meantime, prepare the syrup, recipe here and you may add liqueur.
  9. Remove from the oven and cool slightly.
  10. Poke the cake and pour the syrup over the top while the cake is still in the pan.
  11. Cool completely before remove from the pan.
  12. Enjoy.

Lemon Pound Cake

Ingredients

  1. 1 cup butter
  2. 1 cup sugar
  3. 2 eggs
  4. 1½ cup self-raising flour
  5. ⅛ cup Greek yoghurt
  6. ¼ cup freshly squeezed lemon juice
  7. ½ teaspoon lemon essence
  8. Lemon zest of half a lemon

Glaze

  1. ⅓ cup Icing sugar
  2. 1 tablespoon milk

Directions

  1. Preheat the oven at 180°C.
  2. In a mixing bowl, add butter and sugar and mix.
  3. Whisk in the eggs one at a time and add lemon essence.
  4. Add in half the flour and mix, add yoghurt and then the remaining the flour and mix.
  5. Add in lemon juice and lemon zest and mix.
  6. Pour the batter into a greased loaf pan and bake for 30-35 minutes or until slightly golden brown and when a toothpick inserted comes out clean.
  7. Remove from the oven and cool. Then remove from the pan and cool completely on wire rack.
  8. Make the icing sugar glaze and drizzle over the cake.
  9. Enjoy.

Red Velvet Cake with Bakpro

I went to the Bakpro baking weekend event and it was pretty awesome. I learned how to make a red velvet cake, so red velvet cake is my new favourite cake and it could be my favourite of all time only if it didn’t involve red food colouring which stains everything.

Ingredients

  1. 2 cups cake flour
  2. ¼ teaspoon baking powder
  3. ¾ cup butter
  4. 1¼ cups castor sugar
  5. 3 large eggs
  6. 1½ teaspoon vanilla extract
  7. 1⅓ cups buttermilk
  8. 3 teaspoon red food colouring
  9. 2 teaspoon cocoa powder
  10. 1½ teaspoon white vinegar
  11. 1½ teaspoon baking soda

Frosting

  1. 1 cup cream cheese
  2. ⅔ cup icing sugar
  3. 1 teaspoon vanilla extract
  4. 1 cup fresh cream
  5. Desiccated coconut
  6. red food colouring

Directions

  1. Mix butter and sugar until light and fluffy. Add in the eggs, one at a time and mix well.
  2. Add vanilla extract.
  3. Mix the cocoa powder and red food colouring to form a paste and add to the batter and mix well.
  4. Sieve the flour and baking powder and add to the batter mixture alternating with buttermilk and mix until smooth.
  5. Mix the vinegar and baking soda and let a few bubbles out and add to the batter and mix well.
  6. Divide the batter into two equal greased cake pans and bake for 25-30 minutes or when a toothpick inserted comes out clean.
  7. Let cool for a few minutes before removing from pan to cool completely on a wire rack.
  8. For the frosting, whisk the cream cheese and icing sugar and vanilla and use as a filling between the layers.
  9. Whisk the cream and use to frost the rest of the cake.
  10. Decorate with desiccated coconut mixed with red food colouring.
  11. Enjoy.

  1. 1 Cup sugar
  2. 2 cups self-raising flour
  3. ½ butter, room temperature
  4. 2 eggs, lightly beaten
  5. ½ cup milk
  6. ¼ cup cocoa powder
  7. ¼ cup warm water
  8. 1 teaspoon vanilla

Frosting

  1. Chocolate
  2. ⅓ cup butter
  3. icing sugar
  4. berries

Directions

  1. Pre-heat the oven at 175°C.
  2. In a mixing bowl, add cocoa powder and warm water, mix and set aside to cool.
  3. In a separate bowl, add butter and sugar and mix.
  4. Add eggs and vanilla and whisk.
  5. Pour in the cocoa mixture and mix.
  6. Add flour and milk in two increments and mix.
  7. Divide the batter into two equal parts and pour into a heart shaped greased pan and bake for 30-35 minutes.
  8. Remove from the oven and cool for about 10 minutes.
  9. Remove from the oven and cool completely on wire rack.
  10. Melt the chocolate and butter and mix well, add in the icing sugar, mix and frost the cake.
  11. Garnish with berries.
  12. Enjoy.

  2. In a mixing bowl, add butter and sugar and mix.
  3. Add eggs and vanilla and whisk/or use an electric mixer.
  4. Add flour and milk in two increments and mix.
  5. Add in the liqueur and cherries and mix with a spatula.
  6. Pour the batter into a greased and dusted pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7.  Cool on the wire rack for about 10 minutes, then remove from the pan and let it cool completely.
  8. Enjoy.
