Lemon Pound Cake


  1. 1 cup butter
  2. 1 cup sugar
  3. 2 eggs
  4. 1½ cup self-raising flour
  5. ⅛ cup Greek yoghurt
  6. ¼ cup freshly squeezed lemon juice
  7. ½ teaspoon lemon essence
  8. Lemon zest of half a lemon


  1. ⅓ cup Icing sugar
  2. 1 tablespoon milk

  1. Preheat the oven at 180°C.
  2. In a mixing bowl, add butter and sugar and mix.
  3. Whisk in the eggs one at a time and add lemon essence.
  4. Add in half the flour and mix, add yoghurt and then the remaining the flour and mix.
  5. Add in lemon juice and lemon zest and mix.
  6. Pour the batter into a greased loaf pan and bake for 30-35 minutes or until slightly golden brown and when a toothpick inserted comes out clean.
  7. Remove from the oven and cool. Then remove from the pan and cool completely on wire rack.
  8. Make the icing sugar glaze and drizzle over the cake.
  9. Enjoy.
