
Ingredients
- 1 Large apple
- 1 cup raisins
- ½ cup Buttermilk
- ⅓ cup raisin water
- ¼ cup sunflower oil
- 2 eggs
- ¼ cup sugar
- 1 cup oats
- ⅔ cup self-raising flour
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon salt
Directions
- Soak the raisins for 30-60 minutes.
- Strain the water from the raisins and reserve ⅓ cup.
- Mix oats, buttermilk, raisin water and set aside and let it soak for a few minutes.
- Mix flour, sugar, salt, baking soda, cinnamon and set aside.
- Cut the apple into chunks.
- Add all the wet ingredients into the oats mixture and mix well.
- Add raisins, apple chunks and mix.
- Fold in the flour mixture.
- Divide equally into a lined muffin tin.
- Bake for 35 minutes in 180℃ degree preheated oven.
- Remove from the oven and Cool.
- Enjoy.
