Banana Bread

Ingredients

  1. 2 large ripe bananas
  2. 1 banana, extra for topping (optional)
  3. 2 eggs
  4. ⅓ cup of milk
  5. ⅓ cup of buttermilk
  6. ⅓ cup of butter, melted
  7. ⅓ cup of sugar
  8. 1 teaspoon vanilla essence
  9. 1 ¾ cups self-raising flour
  10. ½ teaspoon baking soda
  11. ¼ teaspoon salt
  12.  ½ cinnamon, ¼ nutmeg, ¼ cloves (optional)

Directions

  1. Preheat the oven to 180℃.
  2. In a mixing bowl, mix flour, sugar, baking soda, salt and spices and set aside.
  3. Mash the bananas and set aside.
  4. In a separate bowl, whisk eggs.
  5. Add milk, buttermilk, butter, vanilla, mashed bananas and mix.
  6. Fold in the flour mixture. Do not over mix.
  7. Pour into a greased loaf pan.
  8. Top with a split banana and bake for 55-60 minutes
  9. Remove from the oven.
  10. Cover with a kitchen towel and cool in the pan for 20 minutes.
  11. Best served warm.
  12. Enjoy.
