Red Velvet Mini Cakes

Ingredients

  1. 1 ⅓ cup sugar
  2. ½ cup butter at room temperature
  3. 2 eggs
  4. 1 cup buttermilk
  5. 2 teaspoons red food colouring
  6. 3 teaspoons cocoa powder
  7. 2 cups self-raising flour
  8. ½ teaspoon baking soda
  9. 1 teaspoon white vinegar
  10. 1 teaspoon vanilla
  11. A pinch of salt

Frosting

  1. Cream cheese
  2. Butter
  3. Icing sugar
  4. Glace cherries

Directions

  1. Preheat the oven to 180°C.
  2. Mix butter and sugar until light and fluffy. Add in the eggs, one at a time and mix well.
  3. Add vanilla extract.
  4. Mix the cocoa powder and red food colouring to form a paste and add to the batter and mix well.
  5. Sieve the flour and salt.
  6. Add in the flour and buttermilk alternatively and mix until smooth.
  7. Mix the vinegar and baking soda and let a few bubbles out and add to the batter and mix well.
  8. Pour the batter into a parchment paper lined baking sheet and spread it thinly and evenly.
  9. Bake for 15-18 minutes or when a toothpick inserted comes out clean.
  10. Let cool in the pan.
  11. Use a cookie cutter to cut out the mini cakes.
  12. Prepare the frosting and frost the cakes by staking them and decorate as desired.
  13. Enjoy.

Ingredients

  1. 1 cup crushed pineapple with the syrup
  2. 2 eggs
  3. ½ cup butter
  4. ½ cup water
  5. 1 teaspoon vanilla
  6. 2 ½ cup flour

Directions

  1. Preheat the oven to 180°C.
  2. Mix all the dry ingredients and set aside.
  3. In a separate bowl mix all the wet ingredients.
  4. Add in the dry ingredients mixture and mix well.
  5. Pour the batter halfway into a greased bundt pan and bake for 35-40 minutes.
  6. Remove from the oven and cool slightly before removing from the pan and cooling completely on a wire rack.
  7. Prepare the icing glaze and drizzle over the top.

  1. Preheat the oven to 180°C.

  1. 2 cups festive cake mix
  2. Chopped glacé cherries
  3. ½ cup crushed pineapple
  4. ¾ cup butter
  5. ¾ cup dark brown sugar
  6. 2 eggs
  7. 1/3 cup festive cake mix soaking water
  8. ¼ pineapple syrup
  9. 1 teaspoon vanilla
  10. 2 ⅓ cup self-raising flour
  11. 1 teaspoon cinnamon
  12. ½ teaspoon nutmeg
  13. ½ teaspoon clove
  14. ½ teaspoon ginger
  15. ½ teaspoon baking soda

Syrup

  1. 1 cup brown sugar
  2. ½ cup butter
  3. ½ teaspoon vanilla

Directions

  1. Preheat the oven to 175°C.
  2. Soak the festive cake mix for about an hour.
  3. Mix all the dry ingredients (flour, spices and baking soda) and set aside.
  4. In a mixing bowl, add butter, sugar, eggs vanilla and mix.
  5. Add in the flour mixture alternating with soaking water and pineapple syrup and mix well.
  6. Add in the festive cake mix, glacé cherries and pineapple and mix well but do not over mix.
  7. Pour into greased or parchment paper lined pans and bake for 40-45 minutes for medium pans and 35-40 minutes for small pans. Makes 2 medium or 4 small cakes.
  8. In the meantime, prepare the syrup, recipe here and you may add liqueur.
  9. Remove from the oven and cool slightly.
  10. Poke the cake and pour the syrup over the top while the cake is still in the pan.
  11. Cool completely before remove from the pan.
  12. Enjoy.
