Overnight oats

This recipe is great if you don’t have time to make, sit and eat your breakfast in the morning, you can simply make this the night before and enjoy it in the morning on your way to work, school or wherever you need to go. I used a 350ml jar; you may need to increase the ingredients if you have a bigger jar. You can try different fruits if you don’t like apples, however I tried this with bananas and I didn’t like it at all (I love bananas by the way but it just didn’t work for this recipe for me).

Ingredients

  1. 1/3 cup oats
  2. ½ cup milk
  3. 1/3 cup Greek yoghurt
  4. ¼ seeds(I used sunflower seeds, but you can used any seeds you like)
  5. ½ teaspoon cinnamon(optional)
  6. ½ teaspoon nutmeg (optional)
  7. 2 teaspoons honey
  8. ½ apple, chopped (optional or replace with your choice of fruit)
  9. 350ml jar

Directions

  1. Add oats, seeds, cinnamon, nutmeg, honey, milk into the jar and shake well.
  2.  Add yoghurt and shake.
  3. Add apples and shake.
  4. Close the jar tightly and refrigerate overnight.

Avocado and Egg Tortilla

Ingredients

  1. 1 small flour tortilla
  2. ½ avocado
  3. 1 large egg
  4. ¼ cup cottage/cream cheese(I used cottage)
  5. Salt and pepper to taste

Directions

  1. Make your scramble eggs the way you like them.
  2. Slice the avocado thinly.
  3. Spread the tortilla with cottage cheese.
  4. Sprinkle with salt and pepper.
  5. Layer avocado slices on top of the cottage cheese.
  6. Follow with layer of scrambled eggs.
  7. Wrap it up and enjoy.

Banana Ice-cream

You can make this ice-cream with only bananas; the other ingredients are completely optional and it’s all up to you but I’m completely obsessed with cinnamon and nutmeg and use them in everything.  Although honey is also optional for this recipe, I recommend (especially if you have a sweet tooth problem like me) you add even just a little bit of it or any other sweetener of your choice for a total indulgent experience.

Ingredients

  1. 4 large ripe bananas, sliced and frozen
  2. 4 teaspoons honey (optional)
  3. ½ teaspoon cinnamon(optional)
  4. ½ teaspoon nutmeg(optional)

  1. Remove the banana from the freezer and wait for about 1 hour if it’s very hard.
  2. Put the bananas in the blender.
  3. Add honey, cinnamon and nutmeg.
  4. Blend on high speed until smooth.
  5. If it’s too hard to blend, add a bit of water.
  6. Freeze for about 6 hours or until it’s hardened.
  7. Enjoy guilt free and absolutely delicious ice-cream.

Mixed Berry Muffins

Ingredients

  1. 1 cup mixed berries
  2. ½ cup  butter, melted
  3. 2 large eggs, lightly beaten
  4. ½ cup milk
  5. 2 cups self raising flour
  6. ½ cup sugar
  7. ½ teaspoon baking soda
  8. 1 teaspoon vanilla essence

Directions

  1. Preheat the oven at 180°C.
  2. Grease or line a muffin tin with muffin/cupcake liners.
  3. In a bowl, whisk together all the wet ingredients (butter, milk, eggs and vanilla essence).
  4. In a separate bowl, mix the dry ingredients (flour, sugar, baking soda) with a spatula.
  5. Pour the wet ingredients into the dry ingredients and mix with a spatula. Do not over-mix, we do not want a smooth consistency, just make sure that all the ingredients are incorporated.
  6. Fill the cups with about 2/3 full, leaving a little space at the top because it will rise a bit.
  7. Bake for about 30 min until golden brown and a tooth pick inserted in the center comes out clean.
  8. Cool for 10 minutes before removing from the pan.

Individual Chocolate Brownies

Ingredients

  1. 90 grams dark chocolate bar, chopped(you can also use semi sweet chocolate chips or any chocolate bar of your choice), I used a whole nut chocolate bar.
  2. ¼ cup cocoa
  3. 1/3 cup sugar
  4. ½ cup butter, melted
  5. 1 cup flour
  6. 1 large egg
  7. ½ teaspoon vanilla essence

Directions

  1. Pre-heat the oven at 180° Celsius.
  2. Mix the cocoa in ¼ cup water of warm water and set aside.
  3. In a bowl add butter, sugar, egg, vanilla essence and whisk.
  4. Add the cocoa and mix.
  5. Add the flour and mix.
  6. Add the chocolate chips and mix.
  7. Pour into greased ramekins and bake for 30 minutes or when a toothpick inserted comes out clean.
