Soft Dinner Rolls

Ingredients

  1. 3 cups of flour
  2. ½ packet of yeast
  3. 1 teaspoon of salt
  4. ¼ cup of sugar
  5. 2 eggs
  6. ¼ cup of butter, melted
  7. 1⅔ cup of warm milk

Directions

  1. In a bowl of a stand mixer or by hand, add flour and mix in the yeast and salt on the opposite sides of the bowl.
  2. Add all the other ingredients and mix until everything is incorporated.
  3. Knead until you form a ball of dough.
  4. Coat the bowl and dough with butter, cover with cling wrap and a kitchen towel and it rise for 1 hour or until doubled in size.
  5. Punch the air out, flatten on a surface and divide into 12 equal pieces and form into balls and place onto a greased baking sheet.
  6. Cover with cling wrap and a kitchen towel again and rest for 30 minutes.
  7. Preheat the oven to 180°C.
  8. Bake for 20-25 minutes until golden brown.
  9. Remove from the oven and cool completely on a wire rack.
  10. Enjoy.

Oshikwiila-Mahangu Bread

Ingredients

  1. 1 1/3 cup of mahangu flour
  2. 1/3 cup of cake flour
  3. 1/2 teaspoon of baking powder
  4. 1/2 teaspoon baking soda
  5. 1/3 cup of sugar
  6. 2 eggs
  7. 1/3 cup of butter, melted
  8. 1 cup of oshikandela cultured milk, plain
  9. 1/4 cup of milk
  10. 1 teaspoon of vanilla essence (optional)

Directions

  1. Place a cast iron skillet in the oven and preheat to 180°C.
  2. Mix all the dry ingredients and set aside.
  3. Mix oshikandela cultured milk and milk and set aside.
  4. In a separate bowl, beat eggs, sugar and vanilla essence until airy.
  5. Add butter and the milk mixture and mix gently.
  6. Fold in the flour mixture.
  7. Melt a tablespoon of butter in the skillet.
  8. Pour in the batter and bake to 35-40 minutes.
  9. Remove from the oven and cool completely.
  10. Enjoy.

Ingredients

  1. 1 1/4 cup of maize meal
  2. 1/2 cup of cake flour
  3. 1/2 teaspoon of baking powder
  4. 1/2 teaspoon of baking soda

  6. 1/2 teaspoon of salt
  7. 2 eggs
  8. 1/3 cup of sugar
  9. 1 cup of buttermilk
  10. 1/3 cup of butter, melted

Directions

  1. Place a cast iron skillet in the oven and Preheat the oven to 200°C.
  2. Mix all the dry ingredients and set aside.
  3. In a bowl, whisk eggs, buttermilk and sugar.
  4. Add butter and mix.
  5. Add in the dry ingredients and mix.
  6. Add a tablespoon of butter to a hot cast iron skillet.
  7. Pour the batter into the hot skillet and bake for 35-40 minutes.
  8. Remove from the oven and cool on a wire rack.
  9. Enjoy.

Custard Bundt Cake

Ingredients

  1. 1 cup of vanilla flavoured custard
  2. 1/3 cup of milk
  3. 1 egg
  4. 1/2 cup of butter
  5. 3/4 cup of sugar
  6. 1 1/2 cup of flour
  7. 1 teaspoon of baking powder

Directions

  1. Preheat the oven to 180°C.
  2. Mix the custard and milk and set aside.
  3. In a mixing bowl, cream butter and sugar.
  4. Add the egg and whisk well.
  5. Add the custard mixture and mix.
  6. Add flour and baking powder and mix.
  7. Pour the batter into a greased and floured bundt cake pan and bake for 45 minutes.
  8. Remove from the oven and cool on a wire rack for 10 minutes.
  9. Remove from the pan and cool completely.
  10. Glaze as you wish.
  11. Serve with warm custard.
  12. Enjoy.

Homemade Bagels

Ingredients

  1. 5 cups white bread flour
  2. 1 ¾ cups lukewarm water
  3. 1 packet of instant dry yeast
  4. 2 teaspoon salt
  5. 4 teaspoon of sugar
  6. 2 tablespoon of sunflower oil
  7. Eggwhite wash

Directions

  1. Using a stand mixer or by hand, add flour into a bowl and add yeast and salt on the opposite sides of the bowl and mix in with the flour.
  2. In a measuring jug, add water, sugar, oil and mix until the sugar is dissolved.
  3. Pour the liquid mixture into the four mixture and mix until everything is incorporated, then Knead the dough on medium for 8-10 minutes.
  4. Turn the dough onto a worktop, add extra oil on the dough and knead until smooth. Don’t add flour.
  5. Place the dough into an oiled bowl, cover with cling wrap and let it rise for about an hour in a warm place.
  6. knock the air out and place on a lightly oiled surface and divide into equal pieces (use a scale if you want to be precise). Makes 14-16 bagels.
  7. Mould the pieces into balls by rolling the dough on the worktop with your hand, place on a lightly floured surface and flatten the top by slightly pressing with your hand, cover with a towel and proof for 20 minutes.
  8. Preheat the oven to 220°C.
  9. To shape the bagels, use a piping tip to cut out holes in the centre of the bagels.
  10. In a large pot, bring water to a simmer, gently place the bagels into the pot and cook for 45-60 seconds on both sides. Remove from the pot and place on a parchment paper-lined baking sheet.
  11. Brush with egg wash and sprinkle with your choice of toppings.
  12. Reduce the oven to 200°C and bake for 20 minutes on the top rack until golden brown.
  13. Remove from the oven and cool completely.
  14. Enjoy.
