Ingredients
- ½ cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla
- ⅓ cup butter, melted
- ½ cup milk
- ¼ cup sugar
- 1 cup flour
- ⅛ teaspoon baking powder
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
- A pinch of salt
Directions
- In a bowl, whisk butter, egg, milk and vanilla.
- Add flour, baking powder, salt, sugar, cinnamon, nutmeg and mix.
- Add in the pumpkin puree and whisk.
- On medium heat, heat up a non-stick pan and lightly oil with butter.
- Scoop about ⅓ cup of pancake batter per pancake onto the pan and cook until golden brown on both sides.
- Serve with syrup.
