Festive Amarula and fruit cake

Inspiration for this recipe came with my cake mix from food lover’s market.

Ingredients

  1. 1/3 cup,  Amarula liqueur
  2. 2 cups, festive cake mix
  3. ½ cup, dark brown sugar
  4. ½ cup, butter
  5. 1 cup, water
  6. 1 cup flour
  7. 1 egg, lightly beaten
  8. ½ teaspoon, baking soda
  9. ½ teaspoon, cinnamon
  10. 1/3 teaspoon, ginger
  11. 1/3 teaspoon, nutmeg

Directions

  1. On medium heat, add water, sugar and butter into the pot and bring to a boil.
  2. Add the cake mix and cook for 15 minutes.
  3. Remove from the heat and cool completely.
  4. Preheat the oven at 160° Celsius.
  5. Pour the cooked mixture into a mixing bowl.
  6. Add in the spices and baking soda and mix.
  7. Add flour and mix.
  8. Add the liqueur and mix.
  9. Pour the batter into a greased cake pan and bake for 1 hour.
  10. Remove from the oven and cool for about 10 minutes.
  11. Remove from the pan and cool completely on a wire rack.
  12. Dust with icing sugar or decorate with dried fruits.
  13. I made two small cakes with this batter; it can also make one regular sized cake.
  14. Enjoy.

Christmas Cake

Ingredients

  1. 2 cups of flour
  2. 1 cup butter at room temperature
  3. 2 eggs
  4. ½ cup of milk
  5. ½ teaspoon vanilla
  6. ½ cup Glace cherries(red and green), chopped
  7. 3 tablespoons of liqueur

Directions

  1. Preheat the oven at 180° Celsius.
  2. In a mixing bowl, add butter and sugar and mix.
  3. Add eggs and vanilla and whisk/or use an electric mixer.
  4. Add flour and milk in two increments and mix.
  5. Add in the liqueur and cherries and mix with a spatula.
  6. Pour the batter into a greased and dusted pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7.  Cool on the wire rack for about 10 minutes, then remove from the pan and let it cool completely.
  8. Enjoy.

Vetkoek

Ingredients

  1. 3 cups, flour
  2. 1/3 cup, sugar
  3. 1 teaspoon salt
  4. 2/3 cup lukewarm water
  5. 2/3 cup, lukewarm milk
  6. 1 tablespoon, yeast
  7. Cooking oil for deep frying (this will depend on the size of your pan, about 3-4 cups for a small pan)

Directions

  1. Add all the dry ingredients (flour, sugar, salt, yeast) into a mixing bowl and mix well.
  2. Add milk and water in two increments and mix with a wooden spatula until a smooth consistency (this will take some time and energy but just think of it as a full arm workout).
  3. Cover the bowl with plastic cover, let the dough rise for about an hour in a warm place (do not refrigerate).
  4. Heat up the oil in a deep pan on medium heat.
  5. Take small portions from the dough and mould with your hands to form small balls as you drop them into the hot oil.
  6. Deep fry until golden brown on both sides.
  7. Remove from the oil and place on kitchen paper to remove access oil.
  8. Serve as is or if you have a sweet, tooth dust with some icing sugar or serve with honey, syrup or jam.
  9. Makes about 24 small vetkoeks.

Birthday cupcakes

Birthday cupcakes

Instead of making birthday cakes, I’ve been making birthday cupcakes lately. They are so much fun especially for kiddies birthday parties and I’m a big kid and I absolutely love kiddies birthday parties.

Ingredients

  1. 1½ cup self raising flour
  2. ½ cup sugar
  3. ½ cup butter, at room temperature
  4. 2 large eggs
  5. 1 teaspoon vanilla essence
  6. ½ cup milk

Frosting

  1. ½ icing sugar
  2. 2 table spoon of milk
  3. m&m’s
  4. rainbow sprinkles

Directions

  1. With the mixer on low, mix the butter and sugar for about 1 minute, add in the eggs one at a time and vanilla essence and mix well.
  2. Add in half the flour and half the milk and mix, and add in the remaining flour and milk and then mix again.
  3. With an ice-cream scoop, fill the cupcake pan evenly with the batter.
  4. Bake for 20-25 minutes or when a toothpick inserted comes out clean.
  5. Cool completely on a wire rack
  6. For the frosting:  Mix the icing sugar and milk and then spread it on top of the cupcakes.
  7. Top with the sprinkles or m&m’s.
