Sweet Potato Pancakes

Sweet Potato pancake

Ingredients
1. 1 Cup sweet potato cooked and roughly mashed
2. ¼ cup butter, melted
3. 1 large egg
4. ½ teaspoon vanilla essence
5. ¼ cup sugar
6. ½ cup milk
7. ½ cup flour
8. ½ teaspoon nutmeg
9. ½ teaspoon cinnamon

Directions

1. Pre-heat the oven at 180° Celsius.
2. In a mixing bowl, add everything accept the sweet potato and whisk.
3. Add the sweet potato and mix well.
4. Pour into greased ramekins or oven dish and bake for 25-30 minutes.

Tuna Pasta

Ingredients

  1. Canned tuna
  2. Pasta
  3. 1 tomato, chopped
  4. ½ cucumber, chopped
  5. 1 green pepper, chopped
  6. ⅓ of a small onion, chopped
  7. ¼ cup sunflower seeds
  8. Olive oil(you can skip the oil if your tuna is canned in oil)
  9. Cottage cheese
  10. 2 tablespoon lemon juice
  11. salt and pepper to taste

Directions

  1. Cook the pasta to your liking, and set aside to cool.
  2. In a mixing bowl, add the tomato, cucumber, green pepper and onion and mix.
  3. Add in the tuna, olive oil and lemon juice and mix.
  4. Add cottage cheese, salt and pepper and mix.
  5. Add the pasta and seeds and mix.

Birthday cupcakes

Birthday cupcakes

Instead of making birthday cakes, I’ve been making birthday cupcakes lately. They are so much fun especially for kiddies birthday parties and I’m a big kid and I absolutely love kiddies birthday parties.

Ingredients

  1. 1½ cup self raising flour
  2. ½ cup sugar
  3. ½ cup butter, at room temperature
  4. 2 large eggs
  5. 1 teaspoon vanilla essence
  6. ½ cup milk

Frosting

  1. ½ icing sugar
  2. 2 table spoon of milk
  3. m&m’s
  4. rainbow sprinkles

Directions

  1. With the mixer on low, mix the butter and sugar for about 1 minute, add in the eggs one at a time and vanilla essence and mix well.
  2. Add in half the flour and half the milk and mix, and add in the remaining flour and milk and then mix again.
  3. With an ice-cream scoop, fill the cupcake pan evenly with the batter.
  4. Bake for 20-25 minutes or when a toothpick inserted comes out clean.
  5. Cool completely on a wire rack
  6. For the frosting:  Mix the icing sugar and milk and then spread it on top of the cupcakes.
  7. Top with the sprinkles or m&m’s.

Creamy Pasta

I stole this recipe from my colleague and it’s so that good he couldn’t describe it, so he named it “the Christmas pasta”! it is a nice alternative to a plain white sauce.

Ingredients

  1. Pasta of your choice
  2. ¼ cup cream cheese
  3. ½ cup milk
  4. 1 egg yolk
  5. 2 teaspoon of flour to thicken
  6. 2 tablespoon butter
  7. 2 tablespoon olive oil
  8. ½ teaspoon nutmeg
  9. salt and pepper to taste

Directions

  1. Cook the pasta to your liking.
  2. On low heat, add the butter and cream cheese into a saucepan and stir until melted and well mixed.
  3.  In a cup, mix the milk and flour and pour into the saucepan, keep stirring at all times until it comes to a boil.
  4. Stir in the egg yolk.
  5. Add nutmeg, salt and pepper.
  6. Add in the olive oil and stir.
  7. Stir in the pasta, turn off the heat and let it simmer for about two minutes and then its done and ready to serve.
  8. Serves 3.

Ingredients

  1. Beer bread mix
  2. Beer 330ml  at room temperature

Directions

Although it’s pretty simple and straight forward, your beer bread mix should come with instructions, below are the instructions from my beer bread mix container:

  1. Pre heat the oven at 180°C.
  2. Grease and dust your loaf pan.
  3. Empty the beer bread mix (450g) into a mixing bowl and add the beer.
  4. Mix until all the ingredient are well combined and the dough is smooth.
  5. Pour the dough into the loaf pan.
  6. Brush the top generously with melted butter, this will make sure you have a crispy crust.
  7. Bake between 45 minutes and 1 hour until golden brown and when a toothpick inserted come out clean.
  8. Remove from the oven and cool for 15 minutes and remove from the pan.
  9. Best served warm with butter or cheese.
