Chocolate Chip Muffins

Ingredients

  1. ½ cup chocolate chips
  2. 2 cups of flour
  3. ½ cup sugar
  4. ½ cup butter at room temperature
  5. 1 cup buttermilk
  6. 2 eggs, lightly beaten
  7. 1 teaspoon vanilla

Directions

  1. Preheat the oven at 180° Celsius.
  2. In a mixing bowl, add butter and sugar and combine.
  3. Add eggs, buttermilk and vanilla and whisk.
  4. Add flour and mix with a spatula. (You do not have to whisk and do not over mix).
  5. Add the chocolate chips and mix.
  6. Scoop into a lined muffin pan and bake for 30-35 minutes or until golden brown and when a toothpick inserted comes out clean.
  7. Cool on the wire rack for about 10 minutes.
  8. Enjoy.

Ingredients

  1. 2 teaspoon nutella
  2. 1 cup milk
  3. ½ teaspoon cocoa
  4. A pinch of cinnamon(optional)
  5. A pinch of nutmeg(optional)
  6. Whipped cream(optional)
  7. Marshmallows(optional)

Directions

  1. Turn the stove on low heat.
  2. Add the milk into the pot.
  3. Add the nutella and stir.
  4. Add cocoa, cinnamon and nutmeg while continuously stirring.
  5. Bring to a boil.
  6. Pour into a mug.
  7. Top with whipped cream and marshmallows.
  8. Enjoy.

Ingredients

  1. ½ cup butter, room temperature
  2. 2 large eggs, separated
  3. 1 cup flour
  4. ¼ cup sugar
  5. ½ teaspoon vanilla
  6. 1/3 cup buttermilk
  7. 45 grams white chocolate, melted

  1. Frozen/fresh berries
  2. Sliced banana
  3. Whipped cream
  4. Icing sugar

Directions

  1. Beat the egg white until fluffy and set aside.
  2. In a mixing bowl, add butter, sugar and mix.
  3. Add egg yolk, buttermilk, chocolate and vanilla and whisk.
  4. Fold in the egg white with a spatula.
  5. Sift in the flour and mix with a spatula.
  6. Turn on the waffle maker and spray with cooking spray.
  7. Pour about 1/3 cup of the batter in the middle of the waffle maker, close and cook as per your waffle maker’s instructions or until golden brown.
  8. Remove the waffle when cooked.
  9. Repeat with the remaining batter.
  10. Top with bananas, berries and then whipped cream and dust with icing sugar.
  11. Makes about 5 waffles with a small waffle maker.

Ingredients

  1. 1 ½ cup, grated carrots
  2. 2 cups self raising flour
  3. ½ cup sugar
  4. ½ cup butter, room temperature
  5. 1/3 cup cooking oil
  6. 1/3 cup buttermilk
  7. 2 large eggs
  8. 1 teaspoon vanilla
  9. 1 teaspoon baking soda
  10. ½ teaspoon cinnamon
  11. ½ teaspoon nutmeg

Directions

  1. Preheat the oven at 180° Celsius.
  2. In a mixing bowl add all the dry ingredients (flour, sugar, baking soda, cinnamon, and nutmeg) and mix.
  3. In a separate bowl, add butter, cooking oil and sugar and mix.
  4. Add eggs, buttermilk and vanilla and whisk.
  5. Add half the flour mix and mix; add the remaining flour and mix.
  6. Fold in the carrots.
  7. Fill a lined muffin pan half way evenly with the batter.
  8. Bake for 25-30 minutes, after 20 minutes; reduce the heat to about 160° Celsius or when a toothpick inserted comes out clean.
  9. Remove from the oven a cool on wire rack.

Vetkoek

Ingredients

  1. 3 cups, flour
  2. 1/3 cup, sugar
  3. 1 teaspoon salt
  4. 2/3 cup lukewarm water
  5. 2/3 cup, lukewarm milk
  6. 1 tablespoon, yeast
  7. Cooking oil for deep frying (this will depend on the size of your pan, about 3-4 cups for a small pan)

Directions

  1. Add all the dry ingredients (flour, sugar, salt, yeast) into a mixing bowl and mix well.
  2. Add milk and water in two increments and mix with a wooden spatula until a smooth consistency (this will take some time and energy but just think of it as a full arm workout).
  3. Cover the bowl with plastic cover, let the dough rise for about an hour in a warm place (do not refrigerate).
  4. Heat up the oil in a deep pan on medium heat.
  5. Take small portions from the dough and mould with your hands to form small balls as you drop them into the hot oil.
  6. Deep fry until golden brown on both sides.
  7. Remove from the oil and place on kitchen paper to remove access oil.
  8. Serve as is or if you have a sweet, tooth dust with some icing sugar or serve with honey, syrup or jam.
  9. Makes about 24 small vetkoeks.
