Ingredients
- 1/3 cup dark brown sugar
- ½ cup sugar
- 3 eggs
- 1 tbs melted butter
- 1 tbs brown vinegar
- 2 tbs apricot jam
- 1 cup flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla
Sauce
- 1/3 cup fresh cream
- 1/3 cup butter
- ½ cup sugar
- ¼ water
- 1 tsp vanilla
Directions
- Preheat the oven to 180°C.
- In a bowl, mix the flour, baking soda and salt.
- In a separate bowl, whisk together sugar, eggs and vanilla.
- Add the jam and mix.
- Add butter and vinegar and mix.
- Add the flour mixture and mix well.
- Pour into a greased glass/ceramic oven dish and bake for 20-25 minutes.
- Meanwhile, make the sauce (add all the sauce ingredients into a pot and bring to a boil).
- Remove from the oven.
- Pour the sauce immediately over the top.
- Serve warm with custard or ice-cream.
