Malva pudding

Ingredients

  1. 1/3 cup dark brown sugar
  2. ½ cup sugar
  3. 3 eggs
  4. 1 tbs melted butter
  5. 1 tbs brown vinegar
  6. 2 tbs apricot jam
  7. 1 cup flour
  8. 1 tsp baking soda
  9. ½ tsp salt
  10. 1 tsp vanilla

Sauce

  1. 1/3 cup fresh cream
  2. 1/3 cup butter
  3. ½ cup sugar
  4. ¼ water
  5. 1 tsp vanilla

Directions

  1. Preheat the oven to 180°C.
  2. In a bowl, mix the flour, baking soda and salt.
  3. In a separate bowl, whisk together sugar, eggs and vanilla.
  4. Add the jam and mix.
  5. Add butter and vinegar and mix.
  6. Add the flour mixture and mix well.
  7. Pour into a greased glass/ceramic oven dish and bake for 20-25 minutes.
  8. Meanwhile, make the sauce (add all the sauce ingredients into a pot and bring to a boil).
  9. Remove from the oven.
  10. Pour the sauce immediately over the top.
  11. Serve warm with custard or ice-cream.
  12. Enjoy.
